Raw pad thai recipe


Ingredients


For the Base:
  • 2 medium zucchinis, spiralized or julienned

  • 1 large burdock, spiralized or julienned

  • 1 red bell pepper, thinly sliced

  • 1 fennel bulb, thinly sliced

  • 1/2 cup bean sprouts


For the Sauce:
  • 1/4 cup brazil nut butter

  • 2 tablespoons tamarind puree

  • 1 tablespoon key lime juice

  • 1 cup homemade orange juice

  • 1 shallot, minced

  • 1 teaspoon grated fresh ginger

  • 1/2 teaspoon crushed red pepper flakes (optional, for heat)

  • 1/2 teaspoon of sea salt


For the Toppings (optional):
  • 1/4 cup chopped fresh cilantro

  • 1/4 cup chopped raw pinenuts

  • 2 green onions, thinly sliced

  • Key lime wedges for serving


Directions


  1. Prepare the Vegetables: Spiralize or julienne the zucchinis and burdock. Thinly slice the red bell pepper and fennel bulb. Place all the vegetables in a large mixing bowl along with the bean sprouts. For perfect noodles, I recommend using my favorite spiralizer, which you can purchase here.

  2. Make the Sauce: In a small bowl, combine the brazil nut butter, tamarind puree, key lime juice, orange juice, minced shallot, grated ginger, and crushed red pepper flakes. Whisk them together. Add more orange juice, if necessary, to achieve a smooth, pourable consistency.

  3. Toss: Pour the sauce over the vegetables in the large mixing bowl. Use tongs or clean hands to gently toss everything together until the vegetables are well coated with the sauce.

  4. Serve and Garnish: Divide the raw Pad Thai among serving plates. Top each serving with chopped fresh cilantro, chopped raw pinenuts, and thinly sliced green onions. Serve with lime wedges on the side.

  5. Enjoy: Your raw Pad Thai is ready to be enjoyed immediately. The combination of fresh, crunchy vegetables with the creamy, tangy sauce is both satisfying and refreshing.


Tips:

  • Feel free to add other raw vegetables you enjoy, such as cucumber or cherry tomatoes.

  • For a little extra protein, add some cubed avocado.

  • If you prefer a spicier dish, feel free to add more crushed red pepper flakes.

  • If the sauce is too thick, add more orange juice to thin it out.
