Ingredients

  • 1 tablespoon key lime juice

  • 1/2 teaspoon sea salt (adjust to taste)

  • 1/4 teaspoon cayenne (adjust to taste)


Directions


  1. Prepare Ingredients: Ensure all ingredients are washed and prepped. Chop the fresh tomatoes and soak the sun-dried tomatoes if they’re not already soft.

  2. Blend Ingredients: Add the chopped tomatoes, fresh basil leaves, garlic cloves, olive oil, soaked sun-dried tomatoes, lemon juice, sea salt, and black pepper to a high-speed blender or food processor.

  3. Blend Until Smooth: Blend the mixture until smooth and creamy. If you prefer a chunkier sauce, pulse the blender a few times until you reach your desired consistency.

  4. Taste and Adjust: Taste the sauce and adjust the seasoning if needed. Add more salt, pepper, or lemon juice as desired. If you’re using nutritional yeast, add it in and blend for a few more seconds.

  5. Serve Over Zucchini Noodles: Spiralize your zucchini into noodles using a spiralizer or a julienne peeler. Toss the zucchini noodles with the raw tomato basil sauce until they are well coated.
